Beef Jerky #2

Did a small batch of jerky yesterday. My first try was leathery. The second attempt much better, however the taste was good but not exactly what I'm looking for. Anyways, I guess I will keep trying until I get it right.

  1. I found your blog from Cowgirl's Country Life blog. Saw you are doing what I do a lot of so wanted to ask a question. :)
    I've never done jerky in a smoker, but I love the way yours looks. Do you use paper clips to suspend the seasoned meat in the smoker?
    I see you like yours quite a bit spicier than we do. I've been making jerky for my family for about 35 years and I can honestly say I have never had 2 batches turn out the same.
    Some are chewy, some are crunchy (I only have an oven to do mine in), some are tough and some are just right.
    But good luck! I think any batch you can eat and be happy is a good one. :)
